The cream cheese process, first discovered by William Lawrence of Chester, N.Y in 1872 was later purchased by Phenix Cheese Company, which was then combined with Kraft Cheese.
The Cream Cheese process was later modified to include the pasteurized cheese process invented in 1912 by James L. Kraft. The resulting cream cheese, better known as Philadelphia Cream Cheese, is produced at the Kraft plant located in Lowville NY. The Lowville plant is said to be the largest producer of Cream Cheese in the world.
